For most people, a trip to the zoo is a light-hearted affair. But for Bruce Dawkins, Gourmet Zoo Chef at Tarzan's Kitchen, it's a high-pressure environment where even the slightest slip up can impact the animals' temperament.
Fortunately Bruce is at the top of his game, and his menagerie is a happy bunch. Having trained at the prestigious Academy of Animal Gastronomique Arts, he has prepared dishes at some of the world's most prestigious zoos. Recently, he baked a birthday cake for the world's oldest tortoise.

Despite his outstanding credentials, Bruce believes there is no real secret to cooking for animals: just stick to fresh, simple ingredients, and pay very close attention to each animal's unique tastes. Although when it comes to serving large predators, distance is advised.
